Irish Meals

Did you know that Corned Beef and Cabbage is not in fact a traditional Irish meal? The dish was originally made with boiled bacon and cabbage! Irish emigrants to America found that bacon was expensive and substituted the bacon for corned beef which was much cheaper and tasted just as good!

Irish Meals - History
In the 19th century, the potato featured in most Irish meals. Oats were also popular as were home grown produce such as carrots, turnips, onions and cabbage.

Many people kept pigs and chickens. Eggs and pork were also featured in many Irish meals. During the 20th century processed food and imports from other countries meant the Irish had much more choice in their diet.

In the 19th century cooking was done over the fireplace and used turn for fuel and heat. Turf comes from peat bogs, the Irish cut and dried the turf during the summer months and stored them for use during the colder months for heating and year round as fuel for cooking.

Ireland is surrounded by amazing coastline and its waters produce a huge variety of fish making seafood a popular choice for both locals and tourists. Amazing seafood restaurants appeared featuring lobster, crab, monkfish, salmon as well as freshwater fish such as trout.

Irish Potato Salad
Irish potato salad is a great accompaniment to any dish and a must for parties and family gatherings! Potato salad is a very popular choice and a simple yet delicious dish. The eggs can be left out of the potato salad if preferred or try adding some olive oil and a spring of parsley to garnish for that extra special touch!

Irish Potato Salad - Ingredients
6 medium sized potatoes (peeled and cut into chunks)
1 cup Mayonnaise
1 Cup Celery (thinly sliced)
2 Tablespoons Vinegar
1 Teaspoon salt
1 teaspoon sugar
1/4 tsp. black pepper (ground)
2 hard-boiled eggs (chopped)
1 medium onion (finely chopped)

Irish Potato Salad - Method
Place potatoes in a large saucepan of boiling water and cook for about 15 minutes or until the potatoes are soft (don't overcook!)
Drain and allow potatoes to cool
Mix the mayonnaise, sugar, salt and pepper in a large bowl
Add mixture to the potatoes
Add the celery, eggs and onions and mix carefully (don't mash the salad!)
Put in the refrigerator to chill
Irish Potato - Cheesy Potato Soup Recipe
Potato soup with cheese is a great starter for any meal and perfect for vegetarians! Try serving the potato soup with freshly baked Irish wheaten bread, perfect!

Irish Cheesy Potato Soup - Ingredients
6 cups vegetable broth
6 cups peeled and cubed potatoes
1/2 cup minced onion
1 teaspoon seasoning salt
1/2 teaspoon white pepper
8ozs cream cheese (cut into chunks)

Irish Cheesy Potato Soup - Method
Put the potatoes, onion, vegetable broth and salt and pepper in a large saucepan
Boil until potatoes are tender
Mash a few of the potatoes (this enables them to release starch for thickening)
Reduce the heat to simmer
Add the cream cheese
Keep stirring until the cheese melts (increase the heat as necessary)
Serve immediately
